You say the karate creed from open stance. In open stance, your weapons (hands) are down and visible to your opponent. So this statement is saying "I am showing you my weapons because I do not want to fight".
...But should I be forced to defend myself, my principles, or my honor...should it be a matter of life or death, of right or wrong...then here are my weapons, karate, my empty hands...
What this is saying is if your opponent is forcing you to fight for the reasons above, you will. You are showing your opponent your weapons at the beginning, but you will defend yourself with your weapons if you have to.
